Ingredients

For the pancakes:

  • 1 pack of Go-Low Pancake Mix
  • 4 Eggs
  • 200ml your choice of milk

Topping:

  • 400g smoked salmon
  • 4 tbsp crème fresh
  • 1 lemon, cut into quarters
  • A small handful of fresh dill, chopped (or chives as an alternative)
  • Cracked black pepper

Method

Add all of the pancake ingredients to a mixing bowl and whisk together. Follow the instructions on the packet. When the pancakes are ready, arrange 5 on your plate and top with a large tbsp of crème fresh and smear across. Add a portion of smoked salmon and a sprinkling of fresh dil. Finish off with cracked black pepper and serve with a wedge of lemon.
