Keto Eggs Florentine with Waffles

A delicious quick & easy low carb breakfast or lunch idea that will keep you fuelled for hours.

- Makes 2 servings

 Ingredients:

  • 1/4 Pack Go-low Pancake & Waffle Mix
  • 1 large egg
  • 50ml Milk of choice or water
  • 3 egg yolks
  • tsp lemon juice
  • 1/2 cup butter
  • 4 additional eggs for poaching

Method:

  • Whisk together all the ingredients to make a batter and make 4 small waffles. (The bag is resealable so you don't need to use the mix all at once just scoop out the amount for the recipe and reseal the bag for next time.)

For the Hollondaise Sauce:

  • Whisk together 3 egg yolks, tablespoon of lemon juice, a teaspoon of mustard then add 1/2 cup of hot melted butter to the mix whilst whisking, until emulsified and thickened.
  • Top each waffle with a poached egg and top with hollondaise sauce.
  • Garnish with chopped parsely or wilted spinach (optional).
