Low Carb & Keto friendly Lemon Pound Cake

A zesty sugar free lemon pound cake, delicious for dessert or an afternoon treat with a cuppa!
10 mins to make/40 mins to bake
Ingredients:
- 1 Pack Go-low Pancake & Waffle Mix
- 1/2 cup Erythritol
- 3 1/2 oz full fat cream cheese
- 4 tablespoons coconut oil
- 4 eggs
- 1tsp vanilla extract
- Zest 1/2 lemon
- Juice 1 lemon
Method:
- Mix all the wet ingredients together then combine with the pancake mix.
- Pour into a lined loaf tin and cook at 175C or 350F for 40 mins until the top splits.
- Once cooled completely top with the glaze
Glaze:
- 1/4 cup Erythritol
- Tablespoon unsweetened almond milk
- 1 tsp lemon extract
- Mix together and pour over the loaf.

Found this really easy to make with water. Rolled out as per instructions and cut each round into 8 (triangles) just like my mum used to do when making oatcakes. Lovely with cheese (or a little jam!)

The first pack of mix we made muffins, the only problem with this was them sticking to the muffin cases. But they were really nice.
Next 2 packs I made into a cake - and they are even nicer this way. It's a refreshing change to have something in for Christmas that we don't feel guilty about eating!! Hubby had some with custard, but I've just read you can have it with butter - oh my goodness I will have to try that.

I purchased the very merry muffins. I baked it and I absolutely love it as do my family . As a diabetic it is such a treat to be able to enjoy them without the worry of carbs and suger and most of all sugar spikes . Thank you for making something that diabetics can enjoy

Best low carb bakes on the market and I have tried a fair amount

I baked this like a brownie in my air fryer using my silicone tray but needed more baking time (my timing not packet timing) most of it was baked but some was not but it was nice and I sliced it into 12 portions half in air tight container already eaten. Now started on the ones I put in the freezer.

The first batch became muffins that I slathered in butter. The next batch will become cupcakes with icing. I love the flavour and that they're this versatile! (No photo because I was too busy eating them.)

This is a fantastic easy to use mix for really delicious pancakes without milk or gluten
