Low Carb & Keto friendly Lemon Pound Cake

A zesty sugar free lemon pound cake, delicious for dessert or an afternoon treat with a cuppa!

Ingredients:

  • 1 Pack Go-low Pancake & Waffle Mix
  • 1/2 cup Erythritol
  • 3 1/2 oz full fat cream cheese
  • 4 tablespoons coconut oil
  • 4 eggs
  • 1tsp vanilla extract
  • Zest 1/2 lemon
  • Juice 1 lemon

Method:

  • Mix all the wet ingredients together then combine with the pancake mix.
  • Pour into a lined loaf tin and cook at 175C or 350F for 40 mins until the top splits.
  • Once cooled completely top with the glaze

Glaze:

  • 1/4 cup Erythritol
  • Tablespoon unsweetened almond milk
  • 1 tsp lemon extract
  • Mix together and pour over the loaf.
