Low Carb & Keto Pancakes with Smoked Salmon & Crème Fraîche

Here's a flavoursome low cab & keto friendly dish that can be enjoyed for breakfast lunch and dinner! This blini inspired recipe is packed with simple, fresh flavours that complement each other.

The pancake mix takes seconds to prepare, it whisks together so quickly meaning you can spend more time doing what matters – eating delicious food!

This recipe will serve four, don’t forget your non-stick pan!

Ingredients:

For the pancakes:

  • 1 pack of Go-Low Pancake Mix
  • 4 Eggs
  • 200ml your choice of milk

Topping:

  • 400g smoked salmon
  • 4 tbsp crème fraîche
  • 1 lemon, cut into quarters
  • A small handful of fresh dill, chopped (or chives as an alternative)
  • Cracked black pepper

Method:

  • Add all of the pancake ingredients to a mixing bowl and whisk together. Follow the instructions.
  • When the pancakes are ready, top with a large tbsp of crème fraîche, a portion of smoked salmon and a sprinkling of fresh dill.
  • Finish off with cracked black pepper and serve with a wedge of lemon.
